Moist Marble Cake

  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cup sugar
  • 4 eggs
  • 1/2 cup neutral oil (i.e. corn oil)
  • 1 tsp vanilla extract
  • 1/2 cup milk

Chocolate mix

  • 3 tbsp cocoa
  • 1 tbsp milk

  • Grease a nonstick tin (preferably a loaf tin) and preheat your oven to 350F.
  • Grab the all-purpose flour, baking powder, and salt and mix until well combined. Once mixed, set aside
  • Using another bowl, mix the eggs, sugar, and oil together. Whip on a high speed for around two minutes. The mixture should look creamy and yellow
  • Add the vanilla extract to the creamy mixture
  • Alternately, add the milk and flour to the creamy mixture until just mixed (be careful not to overmix at this stage)
  • Grab a cup of the creamy mixture into a separate bowl. Add the chocolate mix ingredients (cocoa and milk) and combine well.
  • Alternate between adding one dollop of the vanilla batter to the nonstick loaf tin, and then one dollop of the chocolate batter, until all the batter has been used
  • Using a knife, swirl the batter to create a marble effect pattern
  • Bake in the oven for an hour. When your cake is ready, a toothpick or knife placed into the middle of the cake should come out clean
  • Leave to cool on a cooling rack for around 10 minutes before serving
